Ham and Swiss Egg Cups
- 6 slices deli ham
- 1/2 cup shredded Swiss cheese
- 3-4 drops hot sauce
- 1/4 tsp garlic powder
- salt/pepper to taste
Preheat oven to 350.
Whisk together eggs, Swiss cheese, hot sauce and seasoning until they are thoroughly combined. The hot sauce only adds a boost of flavor, no real heat.
Coat muffin tins with nonstick cooking spray.
Place a slice of ham in each cup, forming it to the sides.
Pour egg mixture carefully into each ham cup to 2/3 full.
Sprinkle a little more shredded cheese on top.
Place in oven and bake for 18-20 minutes until top is firm and edges are golden.
Allow to cool slightly then carefully pop out muffin tin.
To freeze your muffins allow them to cool completely, place them in a freezer safe bag or container.
